After culinary school, Dennis Huwaë ( 34 ) chose to apprentice himself to culinary heavyweights such as Onno Kokmeijer and Arjen Speelman of Okura’s Ciel Bleu **. Onno Kokmeijer recognized his talents and, before long he became Sous-Chef of Restaurant Ciel-Bleu**.
However, his ambition to orientate himself internationally still persisted. He left for an internship at London’s Fat Duck ***. On his return to the Netherlands his talent was recognized by 3- Michelin star chef Moshik Roth, with whom he would work closely for eight years. The first years at the legendary Brouwerskolkje**, and the last four years when he wielded the sceptre as Chef at & Samhoud Places **.
He very much enjoyed working at this high level, but decided he would enjoy it even more without the solemn atmosphere and rigid service often found at these restaurants. He was looking for a place where anyone would feel welcome and at ease. He wanted to create an accessible restaurant, low key, but with an extremely high level of quality. He found this place in Restaurant Daalder, where he has been chef and co-owner since 2016. His enthusiasm did not go unnoticed: one year after he joined Daalder, he won the Gault & Millau Award ‘Talented Chef of the Year 2018’
Restaurant Daalder now is one of the busiest and most talked about restaurants in Amsterdam and the past year Dennis has appeared in several TV-shows. He has made his appearance in the TV program Chef’s Line 2019 with master chef Margot Jansen and Jacob Jan Boerma *** and he has recently completed the recordings for the TV Program ‘de Nieuwe Garde’ 2019.
Last year Dennis appeared in the TV program “de nieuwe garde” and was a special guest at the famous Dutch talkshow DWDD.
The Chef’s Line.
In 2018, Dennis joined the Dutch Chef’s Line of the TV program 24 Kitchen, where he is flanked by 3-star chef Jacob Jan Boerma *** and Master Chef Margot Janse.
